TACO CULTURE

In many ways the quick and modern lifestyle of La Capital is personified by the taco: a complexity of flavors and cultures presented in a simple manner and consumed in an instant. Blink, and your cochinita pibil may be gone. In the metropolis of Mexico City most tacos are eaten while standing: on a corner, in a public market, inside a tiny taqueria. While tacos are appreciated as a casual and informal way to eat–as a meal or a quick snack with friends and family–the preparation is as complex as the city itself.
